Clam Chowder Seasoning


Ingredients
4 teaspoons oregano
4 teaspoons dried parsley
2 teaspoons marjoram
2 teaspoons dill
4 teaspoons thyme
4 teaspoons basil
1 teaspoon sage
4 teaspoons rosemary
2 teaspoons tarragon
1 tablespoon all-purpose flour



Directions
  1. Blend ingredients, crushing in a mortar if possible. Store in a resealable plastic bag to refrigerate.

Salmon Sweet & Spicy Rub


Ingredients


2 tablespoons packed light brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
6 (6-ounce) salmon fillets, skin and any pin bones removed
1 tablespoon olive oil
Directions

Combine the brown sugar, chili powder, cumin, salt, and pepper.
Brush each salmon fillet with 1/2 teaspoon of the oil, then rub each fillet with about 1/2 tablespoon of the spice mixture.

Lemon-Paprika Salmon Rub


Ingredients

    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon kosher salt
    • 1/2 teaspoon ground black pepper
    • Zest and juice of 1 lemon
    • 2 tablespoons olive oil, divided

Preparation                                       
  1. In a small bowl, mix together the paprika, garlic powder, salt, pepper, and lemon zest.
    Add 1 tablespoon of the olive oil, then mix well.
  2. Set the salmon on the prepared pan. Gently rub the oil-seasoning mixture over the salmon. Set aside.

    • 2 tablespoons garlic, granulated
    • 2 tablespoons onions, granulated
    • 2 tablespoons black pepper
    • 1 teaspoon oregano, powdered
    • 1/2 teaspoon thyme, powdered
    • 1/2 teaspoon white pepper
    • 1/4 teaspoon basil, powdered
    • 1/4 teaspoon cayenne

Directions

  1. Mix dry ingredients together using a fork or place in a jar, cover and shake it thoroughly. Store in tightly covered container.

Creole Seafood Seasoning

Ingredients

  • 1/3 cup table salt
  • 1/4 cup granulated or powdered garlic
  • 1/4 cup freshly ground black pepper
  • 2 tablespoons cayenne pepper, or to taste
  • 2 tablespoons dried thyme
  • 2 tablespoons dried basil
  • 2 tablespoons dried oregano
  • 1/3 cup paprika
  • 3 tablespoons granulated or powdered onion

 Preparation:
 -Thoroughly combine all ingredients in a blender, food processor, or mixing bowl, and pour the mixture into a large glass or plastic jar. Seal it so that it's airtight. It will keep indefinitely.

  • 6 1/3 tablespoons salt
  • 3 2/3 tablespoons ground celery seed
  • 2 1/2 teaspoons dry mustard powder
  • 2 1/2 teaspoons red pepper flakes, ground
  • 1 1/2 teaspoons ground black pepper
  • 1 1/2 teaspoons ground bay leaves

  • 1 1/2 teaspoons paprika
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • 3/4 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon

Directions

  1. Mix the salt, celery seed, dry mustard powder, red pepper, black pepper, bay leaves, paprika, cloves, allspice, ginger, cardamom, and cinnamon together in a bowl until thoroughly combined. Store in an airtight container.
